What is the difference between a factory-style oil pan and a performance oil pan?

Factory-style oil pans are typically intended to replace a damaged or worn original pan while maintaining stock-type fitment and retaining the factory oil pickup tube. Performance oil pans may add features such as increased oil capacity, baffling, windage control, armored sump protection, or construction upgrades intended for street performance, racing, or custom engine combinations.

Why does baffling matter in an engine oil pan?
